Thai Chicken Burgers

1 lime
1 egg
1 tbsp hot chili-garlic sauce
1 tbsp fish sauce
2 tbsp bread crumbs
1 lb ground chicken
1/4 cup fresh cilantro


1. Grate the peel from the lime into a bowl add the egg and whisk together
2. Stir in the rest of the ingredients and mix gently (USE YOUR HANDS IT'S FUN!)
3. Shape into 4 burgers and using your thumb make a depression in the centre of each burger.
4. Add a tbsp of olive oil to a pan and set over medium heat.
5. Add burgers and cook until golden about 4-5 minutes per side.
6. Reduce heat to medium low, cover and cook until firm when pressed (another 4 minutes approx)

Pink Buttermilk Cookies

Start with these ingredients in lg bowl -
2 c sugar
1 c soft margarine or butter
3 eggs

In a small bowl -
1 c buttermilk
1 tsp baking soda
1 1/2 tbs vanilla

And in another bowl -
4 c flour
1/8 tsp baking powder
1/8 tsp salt

Alternately add the contents of the second two bowls to the first bowl while mixing.

Place 6 lg tbs of dough on a cookie sheet. Bake at 350 degrees for 9 - 11 min.

Blend the following ingredients to icing consistency and spread on cookies -
1 stick margarine or butter
1/2 lb confectioners sugar
1 tbs milk
1 tbs vanilla
2-3 drops red food color

(If icing is thin add more sugar, if icing is thick add more milk.)

Oh I have an amazing recipe I make all the time.

Oi, I couldn't find it. But I found another one I adore that I've made before that is equally brilliant. :aww:

Chicken Broccoli Calzones
Prep: 20 minutes
Bake: 20 minutes

10 ounces frozen chopped broccoli
1/2 teaspoon rubbed sage
1 small onion, finely chopped
3 garlic cloves, minced
1 tablespoon olve oil
2 cups shredded cooked chicken breast
1/2 pound smoked mozzarella cheese, shredded
1/3 cup chopped fresh basil
1/3 cup golden raisins
1 loaf (1 pound) frozen bread dough, thawed
1 egg
1 tablespoon water

1. Cook broccoli according to package directions; drain. Sprinkle w/ sage; set aside.
2. In a large saucepan, saute onion and garlic in olive oil until tender. Remove from the heat. Stir in the broccoli, chicken, cheese, basil and raisins; set aside.
3. On a lightly floured surface, divide dough into four pieces. Roll each piece into a 10-inch circle. Carefully place one circle on a lightly greased baking sheet. Spoon a fourth (or however much you can fit onto it, I had too much. xD but don't take my word for it) of the chicken mixture onto half of the circle. Brush edges of dough with water; fold dough over filling and pinch edges to seal. Repeat with remaining dough and filling.
4. With a sharp knife, make two slashes on each calzone. Beat egg and water; brush over calzones. Bake at 400 degrees for 18-22 minutes or until golden brown.
Yield: Four calzones.

I've posted a ton of Found Recipes here. Some I've tried, some i've not tried, but they're all great!

But here is my vegetarian stew recipe :D
I dont really measure much, I make mostly soups and i just pile things in..

Saute:
onions (add salt with onions, its best this way)
carrots
potatos
celery
turnip/sweetpotato/yam whatever other veggies
(add as much veggies as you need, for however many people you are serving. I fill the pot about half full of veggies)

Cover the veggies with Broth, and bring to a boil
Add Frozen peas/corn (frozen veggies, and tiny veggies) add meatless-meatballs
and add your desired spices.
I like things a little spicy sometimes i add the tiniest pinch of Cumin cuz i love it, and sometimes chili flakes or paprika. I'm a bit of a spice moron and will try anything once :3
mostly I use celery salt, rosemary and definitely a bay leaf or 2.

Cook for a while until veggies are tender (I leave it on medium high)

in a separate cup put 2 tablespoons of flour in 1/2 cup of cold water. whisk it until its smooth.

Slowly stir the flour water mix into your stew. Stir it good.
If you want, you can add some browning sauce to make it brown, but if you use some beef style vegetarian stock, or particularly dark stock, it gets quite dark :)

Give it a few more minutes of cooking, and you are done :D

and you have animal free stew :3

Cranberry Pistachio Biscotti (My Favorite all time biscotti)

INGREDIENTS
1/4 cup light olive oil
3/4 cup white sugar
2 teaspoons vanilla extract
1/2 teaspoon almond extract
2 eggs
1 3/4 cups all-purpose flour
1/4 teaspoon salt
1 teaspoon baking powder
1/2 cup dried cranberries
1 1/2 cups pistachio nuts

DIRECTIONS

Preheat the oven to 300 degrees F (150 degrees C).
In a large bowl, mix together oil and sugar until well blended. Mix in the vanilla and almond extracts, then beat in the eggs. Combine flour, salt, and baking powder; gradually stir into egg mixture. Mix in cranberries and nuts by hand.
Divide dough in half. Form two logs (12x2 inches) on a cookie sheet that has been lined with parchment paper. Dough may be sticky; wet hands with cool water to handle dough more easily.
Bake for 35 minutes in the preheated oven, or until logs are light brown. Remove from oven, and set aside to cool for 10 minutes. Reduce oven heat to 275 degrees F (135 degrees C).
Cut logs on diagonal into 3/4 inch thick slices. (Optional, I always skip it so that they don't get too hard)
Lay on sides on parchment covered cookie sheet. Bake approximately 8 to 10 minutes, or until dry; cool.
Drizzle with white or dark chocolate.

hmm. i've got one i haven't posted online here yet. just passed out the recipe for a few friends.

Beer Bread

Beer Bread:

preheat oven to 365 degrees (farenheit). grease and flour a large breadpan (i don't have the measurements for this sorry). mix together
4 cups of self rising flour, 2 cups sugar, 16 ounces of beer (room temperature, and DO NOT USE LIGHT BEER!!), 1 teaspoon vanilla. Bake for 30 to 45 minutes. test for doneness using a toothpick near the center of the bread, if it comes out clean, it's done. immediately after removing from oven, spread honey over the top of the bread, especially in the center crack of the loaf. let sit in the pan for about 15 minutes, and then flip over onto a wire rack and remove the pan so it can finish cooling. can be served either warm or room temperature.

sorry folks i don't know what the conversions are to metric...

i do lots of baking and such, so if anyone wants some recipes, let me know! i've got tons!

Amazing Oatmeal Cookies w/ no egg

Ingredients
1 cup regular oats
1 cup all-purpose flour
1 cup packed brown sugar
1/2 cup shredded sweetened coconut
1/2 teaspoon baking soda
1/4 cup stick margarine
3 tablespoons water
2 tablespoons Grade A maple syrup
Cinnamon
Cooking spray

Directions
Pre-heat oven: 325 F
Mix oats, flour, sugar and coconut in large bowl. Melt butter in the microwave with the water and maple syrup…add the baking soda to this mixture when it is hot…then add to mix. Grease cookie sheet with cooking spray. Use tablespoon size scoops and place on cookie sheet. Sprinkle with cinnamon on top and bake at 325 F for about 10-15 minutes (they should be a nice gold/en brown colour) or until desired crispness.
